Being a freelancer, on one hand I usually don’t have company to share my lunch time; on the other, I’ve got spare time and my own kitchen to try new food. Most of the times, to be honest, the laziness is stronger than me, but I fight hard against it. Sometimes I win!
My biggest stimulus is the Dutch behaviour of eating sandwich instead of a proper meal. For most people, it sounds not that good food or healthy, but it can be (although, I confess, I don’t really think about it all the time. Give me bacon, please). But the thing is, sandwiches are easier to prepare, specially if you’re cooking to yourself, and it can be a really enjoyable challenge: eating good food, beautiful, easy and quick to prepare. Be creative!
Today I had my version of the brazilian “misto quente”, that is basically a bread filled with cheese and ham, toasted in a frying pan until the cheese is melting and the bread is crunchy (are you already salivating? ‘Cause I am!). My version had bread, ham, young gouda cheese and brie and a bit of spinach to make it “gezond” - ”healthy” in Dutch.
